Friends… I have been keeping a secret from you, and it’s time to come clean.
I make the best chicken salad on the face of the earth.
Listen – I know that those are big words. Here in Arkansas, we’d say “them’s fightin’ words.” Because there’s not much we love more than chicken salad, sweet tea, and potato chips with ranch dip.
Actually, we love anything with ranch, but that’s a whole other story. We buy ranch powder by the case here, and we will not apologize.
Ranch pork chops, ranch potatoes, ANYTHING CAN BE RANCH FLAVORED IF YOU PUT YOUR MIND TO IT.
So. Chicken salad. I’ve tweaked this recipe for many years, and anyone who has tried it has immediately asked for the recipe.
Like all of the best kinds of recipes, it started with a pinch of this and a sprinkle of that – I never had any real measurements.
But as more people asked, I decided to pay more attention and come up with a hard copy. And years later, as I try to be a bit more health conscious, I adapted it to drop some of the calories… but none of the flavor.
My precious picky husband can’t even tell the difference. And please don’t mention it.
If he knew that Greek yogurt was involved, he’d never eat it again. WHY ARE HUSBANDS LIKE THIS.
Not only is my light chicken salad perfect for the calorie conscious, it’s also the perfect summer recipe because… NO COOKING!
I love to make a big batch for dinner one night (I usually double it), then enjoy the rest through the week for lunch. I eat mine over a salad, the kiddos love theirs on bread.
No matter how you eat it, it’s delicious!!

Lighter Chicken Salad Recipe
Ingredients
- 1 Rotisserie Chicken, shredded
- 1/2 cup Light Mayonnaise
- 2 tablespoons Plain Greek Yogurt
- 2 packets Stevia, 1 teaspoon
- 2 teaspoons Lemon Pepper
- 1/4 cup Dried Cranberries
- 2 stalks Celery, finely diced
Directions
- In a large bowl, combine shredded chicken, mayonnaise, yogurt, stevia, lemon pepper seasoning, cranberries, and celery until everything is well coated and combined.
- Cover and chill for at least 2 hours to allow flavors to mingle.
- Serve on lettuce leaves, bread, or with bagel chips.
