Barefoot Contessa Shrimp Salad Recipe

    12 Servings

Ingredients

  • 3 tablespoons Kosher Salt, plus 1 teaspoon
  • 1 Lemon, cut into quarters
  • 4 pounds Shrimp, in the shell
  • 2 cups Mayonnaise
  • 1 teaspoon Dijon Mustard
  • 2 tablespoons White Table Wine
  • 1 teaspoon Black Pepper
  • 6 tablespoons Dill, fresh, minced
  • 1 cup Red Onion
  • 3 cups Celery

Directions

  1. Bring five quarts of water, three tablespoons of salt and the lemon to a boil in a large saucepan.
  2. Mix in half the shrimp and reduce the heat to medium.
  3. Cook uncovered for three minutes... or until the shrimp are scarcely cooked through.
  4. Remove with a slotted spoon to a bowl of cold water. Bring this water back to a boil and repeat with the remaining shrimp. Let cool; then peel, and devein the shrimp.
  5. In a separate bowl, whisk together mayonnaise, mustard, wine or vinegar, a teaspoon of salt, pepper and dill.
  6. Combine with the peeled shrimp.
  7. Add in the red onion and celery and check the seasonings.
  8. Serve or cover and refrigerate for a few hours.
