We love a simple make-ahead dessert, especially one that takes just a handful of ingredients and mere minutes to make.

There's a lot to be said about an easy no-bake dessert, especially one that comes together quickly and tastes as good as our mini lemon cheesecakes.

Perfectly portioned into individual little jars, this recipe makes for a particularly delicious make-ahead dessert that's also ideal for picnics and potlucks.

While light and citrusy enough for summer or for enjoying after a freshened up spring dinner, we love this one all year long. It's a favorite!

This delightful recipe for tiny cheesecakes in a jar boasts fewer than 10 ingredients, making it simple to make even at a moment's notice.

  • Graham crackers - Basic graham crackers form the basis of the cheesecake crust. If you want to make these mini cheesecakes last minute but don't have graham crackers in the pantry, consider Oreo cookies or shortbread cookies instead.
  • Butter - Melted butter is the second and final ingredient in the simple graham cracker crust.
  • Cream cheese - The foundation of the cheesecake mixture, be sure your cream cheese is at room temperature before beating.
  • Sugar - A bit of sugar sweetens the cheesecake mixture and reduces some of the tartness of the cream cheese.
  • Lemon - Lemon zest and fresh lemon juice add the perfect, bright lemon flavor to this no-bake cheesecake recipe.
  • Salt - No dessert should ever be complete without a pinch of salt for balance.
  • Vanilla extract - A hint of vanilla helps round out and balance all of the cheesecake flavor.
  • Heavy cream - Heavy cream adds richness and lends a smooth, creamy texture to the cheesecake mixture.
  • Blueberries - Optional as a fun little garnish, we definitely recommend the addition of a a few blueberries.

How to Serve Our No-Bake Lemon Cheesecake

Our beloved mini lemon cheesecake recipe is ideally suited for preparing and serving in small jars. It's such a fun presentation for dessert!

That said, you could also make it in one larger dish such as a trifle dish, keeping in mind that a no-bake cheese will need to be scooped instead of sliced.

The resulting cheesecake is creamy with a lovely lemon flavor infused throughout. Top the cheesecake with lemon zest and plump blueberries for the ultimate treat.
