To make this incredible, festive cranberry bread recipe, you will need:

Ingredients

  • Fresh cranberries - This recipe uses fresh cranberries. Use the leftover berries to make homemade cranberry sauce.
  • Lemon zest and lemon juice - The lemon flavor in this original recipe is part of what makes it so good.
  • Sugar - This recipe uses just granulated sugar. It does not require brown sugar.
  • Flour - Our easy cranberry bread recipe is made with basic all purpose flour.
  • Baking powder - The leavening in this recipe is provided by baking powder - there is no baking soda required.
  • Eggs - Always use large eggs when baking - this bread recipe is no exception.
  • Butter - Like many bread recipes, this one calls for melted butter.
  • Vanilla - Use good quality pure vanilla extract to enrich the flavor of this bread.

  1. Preheat the oven and prepare your loaf pan by lightly spraying with non-stick spray or lining with parchment paper. Set aside.
  2. In a small bowl, toss the cranberries and lemon zest with sugar. Set aside.
  3. In a separate bowl, sift together the dry ingredients - flour, baking powder, and salt.
  4. In yet another bowl, combine the remaining sugar, eggs, and melted butter until well combined. Whisk in the milk and vanilla until combined.
  5. Add this to the flour mixture and gently stir until just combined. Fold in the fresh cranberries.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for the prescribed baking time or until the edges are golden brown.
  8. When the bake time is complete, transfer the loaf to a wire cooling rack.
  9. Once cooled, top with the glaze and serve this great recipe right away or store in an airtight container and serve later.

Ingredients

For the Bread:
  • 1 cup Fresh Cranberries
  • 2 tablespoons Grated Lemon Zest
  • 1/2 cup Granulated Sugar, plus 1 tablespoon
  • 2 1/2 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/2 cup Unsalted Butter, melted
  • 1 cup Whole Milk
  • 2 teaspoons Pure Vanilla Extract
For the Glaze:
  • 1 cup Powdered Sugar
  • 2 tablespoons Fresh Lemon Juice

Directions

  1. Preheat the oven to 350°F
  2. Prepare loaf pan by lightly spraying with non-stick spray or lining with parchment paper. Set aside.
  3. In a small bowl, toss the cranberries and lemon zest with sugar. Set aside.
  4. In a separate bowl, sift together the dry ingredients - flour, baking powder, and salt.
  5. In yet another bowl, combine the remaining sugar, eggs, and melted butter until well combined. Whisk in the milk and vanilla until combined.
  6. Add this to the flour mixture and gently stir until just combined. Fold in the fresh cranberries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-60 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  9. Transfer the loaf to a wire cooling rack.
  10. To make the glaze, whisk together the powdered sugar and lemon juice until smooth.
  11. Once cooled, pour the glaze over the bread then serve.
