Chocolate Cherry Truffles have an incredibly rich chocolate brownie base. Dipped in melted chocolate, you'll be in Valentine heaven!

Truth: Valentine's Day is all about the chocolate.

Okay, so maybe it has a little to do with romance and love, but I'm betting you're more interested in the chocolate.

I'm hoping you're more interested in the chocolate, because I made you chocolate covered cherry brownie truffles.

It's a truffle. It's a brownie. It's both!

You won't believe how easy these truffles are to make. Confession: I used the help of boxed brownie mix and canned cherry pie filling.

Sometimes life calls for a bit of cheating.

The brownies come together in one bowl. You don't even need a mixer; a simple rubber spatula will work just fine.

You'll only need four ingredients to make the brownies: one box of brownie mix, one cup of cherry pie filling, one egg, and 1/4 teaspoon almond extract.

Throw it all in a bowl and stir until combined. Bake for 25-28 minutes.

Easy, right?

After the brownies cool completely, use a fork to break up and fluff the mixture. Roll the mixture into 1-inch balls and chill in the freezer for 15 minutes.

Dip the balls in melted chocolate and add some festive sprinkles. Viola, truffles!

Try your darndest not to eat all of the truffles before gifting them to your sweetie. This task requires great strength and a ton of willpower, both of which I don't have, which is why Squirrel only ended up with 5 truffles.

It's the thought that counts.

These truffles are for the ultimate chocolate lover. They're rich, extra chocolate-y, and extremely decadent.

The soft brownie mixture is dipped in velvety smooth dark chocolate for an extra boost of chocolate. The hard outer shell cracks open to a gooey center full of red cherries.

Chocolate Cherry Truffles Recipe

      15 Servings

Ingredients

  • 1 box Brownie Mix, 18.4 ounces
  • 1 cup Cherry Pie Filling
  • 1/4 cup Canola Oil
  • 1 large Egg
  • 1/4 teaspoon Pure Almond Extract
  • 1 1/2 cups Dark Chocolate
  • Sprinkles

Directions

  1. Preheat the oven to 350°F. Grease a 8-inch-by-8-inch square pan with nonstick baking spray.
  2. In a large bowl, add brownie mix, cherry pie filling, oil, egg, and almond extract. Stir until the mixture is thoroughly combined.
  3. Transfer the mixture to the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean (a few crumbs are recommended). Allow the brownies to cool completely on a wire rack.
  4. Using a fork, break the mixture into crumbs, avoiding the outer edges (as pictured above). We're only using the center of the brownie for this recipe since the edges bake up crunchy. Be sure to save the crunchy edges for snacking.
  5. Roll the mixture into 1-inch balls. The mixture will be sticky. If you find that the balls are sticking to your hands, wash and dry your hands before continuing to roll the rest of the balls. Place the balls on a parchment or wax paper-lined baking sheet. Place the brownie balls in the freezer to chill for 30 minutes.
  6. While the truffles are chilling, melt the chocolate over a double boiler or in the microwave until smooth.  Roll the truffles, one at a time, in the chocolate, making sure they're fully coated on all sides. Use a fork to remove the truffles from the chocolate, allowing the extra chocolate fall off before placing them back on the baking sheet. Top with festive sprinkles.
  7. Once all of the truffles are coated, place the baking sheet back in the freezer to allow the chocolate to harden. Store the truffles in an airtight container in the refrigerator for up to 7 days.
