Have you ever seen the look of horror on your child’s face? Did you know that could happen over cookies? I learned a valuable lesson this past week, do not send all the cookies to work with Daddy.
I spent most of the weekend baking, and one item in particular that I was pretty proud of were these gluten free oatmeal cookies with apple. They pretty much summed up the taste of fall for me, topped with a little bit of delicious nutmeg.

The problem? I’m a living Cookie Monster. I can devour dozens of cookies, so in hopes of not doing that after trying a few and realizing that I would not be able to stay out of those cookies, I sent them all with my husband to work.
The next day, I was making dinner for my kids and planned to eat later. So, I stood in the kitchen and cleaned up as they ate. Then, my almost 2-year-old daughter gets done with her dinner and starts saying, “Cooookie…cookie”. My son chimes in and says, “Cora wants a cookie.” I told him, “I don’t have any cookies.” He said, “Yes, mommy, you made a bunch yesterday, you have cookies on the stove.” That was when he looks and they aren’t there. I said, “I sent all the cookies with daddy to work.”
Then, it happened.
Immediately, as the words flew from my mouth, my daughter went hysterical and my son started growling at me!
Wild animals… I gave birth to wild animals!

This was the first time such a thing had happened in our house and honestly I wasn’t sure if I wanted to laugh, cry, or run and hide from them.
I calmed them down, then hours later when my husband got home my son was still talking about it and telling my husband that he needed to bring those cookies home or he was just going to have to go make them himself!
Lesson. Learned. Whatever you do, don’t send all the cookies away with Daddy, or my kids morph into zoo animals and hysterical creatures of the unknown!

Gluten Free Oatmeal Cookies with Apple Recipe
Ingredients
- 2 1/4 cups All-Purpose Gluten Free Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 cup Butter Softened
- 3/4 cup Sugar
- 3/4 cup Brown Sugar Packed
- 2 Egg
- 1 teaspoon Pure Vanilla Extract
- 1 cup Gluten Free Steel Cut Oats
- 1 teaspoon Cinnamon
- 2 teaspoons Nutmeg Divided
- 1 large Apple Halved and thinly sliced
Instructions
- Preheat oven to 375°F.
- Combine all ingredients in order into a mixing bowl, reserving some of the nutmeg.
- Drop by the tablespoonful on an ungreased cookie sheet about 2 inches apart.
- Sprinkle additional ground nutmeg on the tops of the cookies.
- Bake for 12 minutes; check on them after 10 minutes.
- Remove cookies and let them cool 5 minutes, then move them to a wire rack to complete cooling.
