Boston Cream Pie Bars give you the classic pie in a bar. All ready in less than an hour!
Do you ever get completely overwhelmed about all the tiny little things that need done every day in order to be a successful human being?
It’s ridiculous, really.
The stamp buying and the laundry folding and the lunch packing and the dropping kids off and picking them up. The bills that need paid. The teeth cleanings that need scheduled. The fact that you’re out of a certain kind of yogurt that your child asks for every morning for breakfast. And they only sell said yogurt at a certain store. And no, a different yogurt will definitely NOT work.
My husband doesn’t understand. He really doesn’t.
If I try to explain to my husband why I’m overwhelmed, he’s always trying to find solutions. Like that he’ll go pick up the yogurt for me on his way home from work. But do you know what happens when my husband picks up the yogurt? He decides to just stop at the closest store on his route home and grab a SIMILAR but not AT ALL THE SAME yogurt because he doesn’t understand the difference.
Trust me. If he was here at 7 am and had to deal with our toddler’s reaction, he might see the difference.
My husband sees simple solutions, I see things for what they really are – a never ending list of very specific errands.
Also, the stamps? Sometimes my husband will tell me not to worry about the stamps. “I’ll mail the bills from the office, “ he’ll say. And then later that evening I’ll ask, “hey, you sent off those bills, right?” and he’ll casually say no, that he left them in the truck, but no big deal, he’ll do it tomorrow.
And then I die because one of those bills needed to be mailed today in order to get there on time.
Husbands are just so darn carefree. I envy it, really. I guess it’s necessary for balance, but darn it if it doesn’t make me need a lot of dessert at the end of the day.
I’m a huge fan of Boston cream pie, but these bars are a much simpler, crowd friendly option. You can cut them into little bars ahead of time for simple serving. They’re so good!

Boston Cream Pie Bars Recipe
Ingredients
- 1 box Yellow Cake Mix
- 1/2 cup Salted Butter Melted
- 2 large Egg
- 2 packages Instant Vanilla Pudding 3.4 ounces each
- 3 cups Whole Milk
- 1/2 cup Semisweet Chocolate Chips
- 1/3 cup Heavy Cream
- 3 tablespoons Light Corn Syrup Or honey
Instructions
- Preheat oven to 350°F. Line an 8×8 square pan with foil, spray with nonstick spray and set aside.
- In the bowl of a mixer, beat cake mix, melted butter, and eggs on medium low speed until combined. Mixture will be thick. Press mixture into prepared pan and bake for 15-20 minutes, until edges are set and golden and center is puffy. Remove from oven and let cool completely.
- While bars are baking, prepare topping: In a large bowl, whisk together pudding mixes and milk until thick, about 3 minutes. Place in the refrigerator to thicken until bars have finished baking and have cooled completely.
- Spread filling over bars evenly and place in the refrigerator while you prepare your ganache.
- In a microwave safe bowl, heat chocolate chips and heavy cream for about 2 minutes, stopping to stir every 20 seconds until smooth. Stir in corn syrup or honey and let cool until thick and no longer warm. Spread over bars. Alternately, you can spoon over bars that have been cut into squares.
- Keep bars in refrigerator until time to serve.
