I don’t know about you, but the last thing I want to do during the summer months is have my oven on. Even for just 5 minutes and my home is immediately 5 degrees warmer for a majority of the day. I love using my slow cooker and my grill during the summer months. Today, I’m sharing with you a super simple recipe for pork and black beans made in the slow cooker.

Whether you’re entertaining or simply just want an easy and satisfying meal, this is the recipe for you. This is also an ideal recipe to prep ahead of time and freeze and defrost and cook for a rainy day (or a very busy day).

That’s actually what I did with this recipe. I had a baby 3.5 months ago and before delivering my son I decided I would put together a dozen freezer meals to help me along throughout the first few weeks and months. Boy, am I glad I did that.

If you choose to prepare this meal in advance and then freeze. you’ll want to layer the black beans, barbecue sauce, diced onion, minced garlic and raw diced pork into a freezer gallon bag. Make sure you write what the recipe is, as well as the date you made it on, and cooking instructions on the bag (or the URL where you can find the cooking instructions!).

If you’re really organized and want to step it up a notch just print the recipe and all the information out on a label and then label the bag.

I serve this slow cooker barbecue pork and black beans on top of Texas toast, and with a side of my Italian-style baked potato wedges.

Pork and Black Beans Recipe

    8 Servings

Ingredients

  • 1 1/2 pounds Pork Loin, diced
  • 2 15 oz cans Black Beans, drained and rinsed
  • 1 18 ounce bottle Honey Barbecue Sauce
  • 1 cup Onion, diced
  • 2 teaspoons Garlic, minced
  • 1/2 cup Boiling Water
  • 8 slices Texas Toast

Directions

  1. In a slow cooker add drained and rinsed black beans, diced pork, barbecue sauce, onion, and minced garlic.
  2. Mix well and then add in 1/2 cup of water.
  3. Cook on low 6-7 hours (or high 3-4 hours).
  4. Serve Slow Cooker Barbecue Pork with Black Beans on top of Texas Toast.
