Bethenny Frankel Granola Recipe
Bethenny Frankel of The Apprentice, Real Housewives of New York and her own reality show fame is absolutely nuts about nuts.
In the kitchen, that is!
Once a natural foods chef by trade, she's whipped up a recipe for nutty granola, a satisfying snack that isn't sugar-coated.
Not unlike Bethenny overall in that sense!
Ingredients
- 4 cups oats
- 2 cups almonds
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup water
- 1/2 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup dried cranberries
Directions
Set oven to 300 degrees, and place the oven rack to center position. Lightly oil two large baking sheets.
In a large bowl, stir together oats with nuts and spices. In a small bowl, stir together the warm water with maple syrup and vanilla. Slowly pour the syrup mixture over the nut mixture, and stir with a wooden spoon to combine. Spread out the greased baking sheets.
Bake on the center oven rack for about 30 minutes, stirring every 10 minutes to prevent burning, until the granola is crumbly and golden. Remove from the oven and stir in fruit and raisins.
When the mixture is cool, store it in an airtight container for up to five days or refrigerate it for one month.
