Valentine’s Day - or as my husband calls it “that fake holiday they made up to sell cards.” Personally? I think it’s sweet and I love the fact that he has to buy me a card and write something gushy on the inside. Plus I love flowers and those are usually part of the deal too. I don’t ask to go to dinner because I’m fairly certain I would have a miserable time. I cannot stand crowds and there is nothing more crowded than a dining room on Valentine’s Day.

That’s why normally we join forces and cook together in the kitchen. Every year the meal plan changes and sometimes it’s fancy and sometimes it’s basic. It honestly depends on our feelings that week. However, we always have a cocktail on the menu.

I used to make fun of my husband for his love of frosty “girly” drinks, but then I realized he is really onto something. They are fruity, frozen and full of flavor. Why in the world wouldn’t he love them? So this year I decided to go tropical in February.

I whipped up this quick drink by combining coconut rum, spiced rum and frozen berries. I added whipped cream on top mostly because I’m a whipped cream fanatic and I like the creaminess it adds to the drink. Plus, Valentine's Day sprinkles! Of course, you don't have to add those unless you want to, but they sure are festive. Trust me, if you and your husband are into cooking (and drinking!) at home this drink is a total winner!

Keep this recipe in your back pocket for when summer rolls around too. You can use fresh strawberries, just freeze them first. It wouldn't do any good to add ice to this drink, it'll become watery. And no one needs a watery daiquiri!

Coconut Strawberry Daiquiri Recipe

  2 Servings

Ingredients

  • 2 ounces Coconut Rum
  • 1 ounce Black Spiced Rum
  • 1/4 cup Fresh Lime Juice
  • 2 tablespoons Granulated Sugar
  • 6 ounces Frozen Strawberries, unsweetened
  • Whipped Cream
  • Valentine's Day Sprinkles

Directions

  1. In a high powered blender add coconut rum, spiced rum, lime juice, sugar and strawberries.
  2. Blend until smooth and creamy, pour into serving glass and top with whipped cream and sprinkles (if desired).
