Healthy Comfort Food Fanatic

Jen's father runs a fresh produce business that is family-owned and spans three generations. So Jen is a lifelong lover of fresh, healthy and whole fruits and veggies. However, she fell in love with and married a ""Meat-and-Potatoes-Guy"" who loves rich, satisfying comfort food. So Jen created a food site, The Scrumptious Pumpkin, that is devoted to healthy comfort food. She develops original recipes that are simple, approachable, and easy to prepare. They always features lots of healthy, fresh, whole foods like whole grains, lean protein, heart-healthy oils, low-fat dairy, and tons of fresh vegetables and fruits. However, the dishes are also always ""Meat-and-Potatoes-Guy-Approved"" family-friendly dishes that are satisfying and filling. Jen always enjoys the challenge of performing a “healthy makeover” on comfort food classics. When she's not making a mess in the kitchen cooking healthy comfort food, Jen is probably writing and photographing for The Scrumptious Pumpkin or spoiling her energetic beagle, Calvin, with homemade dog treats.
