Warm weather is finally here. Are you jumping for joy? I know I am.

I finally traded my winter wardrobe for my spring/summer wardrobe. I have a wee obsession with summer dresses. If you take a peek in my closet, you’ll find vibrant, flowing dresses in all varieties. Each year, my obsession grows stronger. As I was shopping at Marshall’s the other day, I picked up a royal blue dress with capped sleeves, and I found a jersey-knit tank dress at my local Costco.

I clearly have no willpower.

Pair that dress with a frozen cocktail, and summer is complete. There's not much more that defines summer than a cute little dress, strappy sandals, and a blended, frozen concoction within arm's reach.

This pineapple mango slush is absolutely summer in a glass. It’s thick, fruity, and frothy.

You’ll need the following:

  • Frozen pineapple chunks
  • Frozen mango chunks
  • Pineapple juice
  • Lime juice
  • Vodka (I like Pineapple-Mango Svedka)
  • Ice
  • Blender
  • Two fancy glasses
  • Pineapple for garnish (optional)

This cocktail is unbelievably simple to make. Grab your trusty blender. I find that adding the liquid to the bottom of the blender makes blending easier. Add the ingredients, starting with the liquid and ending with the ice, to the bowl of your blender. Pulse the mixture until smooth and creamy. If the mixture is too thick, add a touch more pineapple juice. Pour the liquid gold into 2 fancy glasses. Garnish the glasses with a slice of pineapple or wedge of lime.

The combination of pineapple and mango creates a perfectly sweet and fruity cocktail that’s perfect for hot summer days by the pool or long, lazy days lounging on the beach. Don’t forget the colorful straws and cute little paper umbrellas!

Make it a memorable evening - add whipped goat cheese, herby crackers, and Old Bay Chex mix to your tray and retire to the back deck. That's what we're talking about!

Pineapple Mango Slush Recipe

  2 Servings

Ingredients

  • 2/3 cup Pineapple Juice
  • 1/2 cup Vodka, flavor of your choice
  • Fresh Lime Juice, from half a lime
  • 2/3 heaping cup Pineapple Chunks, frozen
  • 2/3 heaping cup Mango, frozen (chunks)
  • 2 teaspoons Agave Syrup
  • 1 cup Ice Cubes

Directions

  1. Add ingredients to the bowl of your blender, starting with the liquid and ending with the ice. Blend until smooth. If the mixture is too thick, add a touch more pineapple juice.
  2. Pour into glasses. Garnish with a slice of pineapple or wedge of lime. Serve.
