This is my first post for Food Fanatic. I have to admit I was really stressed out about it. I mean the first post is always the most important, right? It sets the tone, lets people know what to expect from you. So the pressure is on.

Do you want to set the bar high then endlessly try to top yourself, or do you want to start off with a tried and true recipe so people know your recipes are always dependable? I admit I tossed and turned over the decision. I mean this is important stuff.

Whenever I stress myself out like this, I turn to chocolate. It’s my best friend in times when I need to calm my over-active imagination. Those days where I have trouble focusing on the task at hand, chocolate is my go-to fix.

Since I was still struggling with what to make for my first post I decided to head into the kitchen and whip up one of my easy peasy no bake recipes.

I was craving cherries something awful so I knew I wanted to find a way to them into the recipe. One thing lead to another and next thing you know I was hunkered down on the couch watching The Walking Dead, and munching on a no bake cherry cheesecake full of Oreos and chocolate chips too.

I sat there pondering if zombies like black forest cheesecake, or if there would be any cream cheese left if the apocalypse happened. Then it hit me, I just made my first recipe for Food Fanatic. And I needed to stop eating the photo props immediately!

I hopped into my tiny blog room where I spend most of my days. I mean the parts of the day where I’m not immersed in zombies and pondering things like whether zombies eat chocolate bars. I have a little photo studio area set up by the patio door that leads to the deck, it has great light.

I quickly set up the shot with the cheesecakes and snapped a few too many photos, as usual. I have to say, the best part of my job has to be the photo shoots. I love taking shots with bites out of the food. I tell myself its “art” when really it’s just an excuse to chow down between meals. The more photo shoots I have in a day the more I get to create “art”, also known as snacking. It’s win-win really.

I’m so glad I had this little epiphany while watching The Walking Dead. So for anyone who says TV will rot your brain, well, you’re just plain wrong. Had I have not sat down to ponder the meaning of life while watching hottie McHotterson, also known as Daryl Dixon, save the world, these cute little cherry and chocolate chip no bake cheesecakes may never have been made.

Ingredients

For the Base:
  • 28 lemons oreo, crushed into crumbs (2 cups' worth)
  • 2 tablespoons butter, melted
  • 1 teaspoon granulated sugar, optional
For the Cherry Chip Filling:
  • 1 cup heavy cream
  • 1/2 cup confectioners sugar
  • 4 ounces cream cheese, softened
  • 12 maraschino cherries, chopped as finely as possible
  • 2 teaspoons maraschino cherry juice
  • 1 teaspoon pure almond extract
  • pinch of salt
For the Chocolate Chip Filling:
  • 1 cup heavy cream
  • 1/2 cup confectioners sugar
  • 4 ounces cream cheese, softened
  • 2 ounces semisweet chocolate, melted
  • 1 teaspoon pure vanilla extract
  • pinch of salt
  • 2 ounces milk chocolate, grated
Optional Garnishes:
  • whipped cream
  • grated chocolate
  • maraschino cherries

Directions

For the Base:

  1. Place your graham crumbs in a small mixing bowl. Add the sugar if desired. Mix well.
  2. In another small bowl melt your butter, then pour it over the graham crumb mix. Stir with a fork until well combined.
  3. Set the bowl aside until ready to assemble the cheesecakes.

For the Cherry Chip Filling:

  1. In a stand mixer whip the heavy cream until it's fluffy. Set the bowl aside.
  2. Now in another bowl mix the cream cheese until it's smooth as silk. Add the powdered sugar and mix again till smooth. Add the cherries, cherry liquid, almond extract and a dash of salt. Mix again until combined.
  3. Now slowly fold the whipping cream you made from the heavy cream into the cream cheese mixture. Keep on folding in until it's combined perfectly.
  4. Set this bowl aside, or if you like being fancy you can transfer the mixture to a piping bag and place in the fridge until you're ready to layer the dessert.

For the Chocolate Chip Filling:

  1. In a stand mixer whip the heavy cream until it's fluffy. Set the bowl aside.
  2. In a double bowler melt the chocolate until it's smooth. If you are unsure how to do that all you do is place a heat proof bowl over top of a saucepan with water, but don't let the bottom of the bowl touch the water. Heat the pan over medium heat. Keep the bowl of chocolate over the hot water until you need it so the chocolate stays smooth and melted.
  3. Now in another bowl mix the cream cheese until it's smooth as silk. Add the powdered sugar and mix again till smooth. Now you can add the melted chocolate, vanilla and dash of salt to the cream cheese mix. Mix until well combined.
  4. Now slowly fold the whipping cream you made from the heavy cream into the cream cheese mixture. Keep on folding in until it's combined perfectly. Now you can add the grated pieces of chocolate. Fold in briefly. You want the pieces to say intact and not blend too well.
  5. Set this bowl aside, or if you like being fancy you can transfer the mixture to a piping bag and place in the fridge until you're ready to layer the dessert.

Putting it all together:

  1. Put about a teaspoon of graham crumbs in each serving glass. You can tamp it down with the blunt end of a knife, or if you have a honey dipper they work super well for pressing down graham crumbs in small dishes. Keep at it until all the glasses are filled about 1/3 of the way.
  2. Now pipe, or spoon in the chocolate chip filling, you want to fill each glass so it's 2/3 of the way up the sides.
  3. Now pipe, or spoon in the cherry chip filling so it fills each glass.
  4. You can garnish with whipped cream, grated chocolate and maraschino cherries.
  5. Serve with a big old cherry and chocolate loving smile!
