This ground beef enchilada casserole makes a great meal for the whole family. Because it cooks in one dish, clean-up is quick and easy too!

- 1 1/2 pounds Lean Ground Beef
- 1/2 cup Chopped Onion
- 1 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 tablespoon Chili Powder
- 1/2 teaspoon Cumin
- 4 ounces Chopped Black Olives
- 8 ounces Tomato Sauce
- 1 4 ounce can Diced Jalapeño Peppers
- 6 Flour Tortillas
- 8 ounces Shredded Mexican Cheese
- 1/2 cup Water
Preheat your oven to 400 F.
Brown the ground beef with the onion in a large skillet, then drain.
Add the salt, pepper, chili powder, cumin, olives, tomato sauce, and chile peppers and stir.
Bring the mixture to a boil then remove it from the heat.
Grease a 2 1/2-quart casserole and alternate layers of the meat mixture, lightly buttered tortillas and the cheese, finishing with the cheese on top.
Add the water then cover with foil. Place in the oven for 30 minutes.
You can garnish with your choice of chopped green onions, chopped tomatoes or ripe olives.
