Ingredients

Seedless Watermelon
with rind, about 2 pounds without

tablespoon
Fresh Mint
chopped
juice from half a
Lemon
2
ounces
Feta Cheese
crumbled
Instructions
Remove the rind from the watermelon and cut into 1-inch cubes.
Place in a large bowl and add the mint and lemon juice. Toss to distribute and taste if additional lemon juice is needed.
Sprinkle the feta on top of the salad and serve.
