Ingredients
  

  • 3 pounds Seedless Watermelon with rind, about 2 pounds without
  • 1 tablespoon Fresh Mint chopped
  • juice from half a Lemon
  • 2 ounces Feta Cheese crumbled

Instructions
 

  • Remove the rind from the watermelon and cut into 1-inch cubes.
  • Place in a large bowl and add the mint and lemon juice. Toss to distribute and taste if additional lemon juice is needed.
  • Sprinkle the feta on top of the salad and serve.
