Ingredients
  

  • 1 3/4 cups Oat Bran
  • 3 large Egg Whites
  • 3/4 cup Unsweetened Cocoa Powder
  • 1 Apple peeled and diced (about 1/2 cup)
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Nonfat Vanilla Yogurt
  • 1/2 teaspoon Cream Of Tartar
  • 1 1/2 teaspoons Baking Soda
  • 1 1/2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Boiling Water hot
  • 1/2 cup Splenda or sugar
  • 1 cup Chocolate Chips

Instructions
 

  • Place all ingredients, excluding chocolate chips, into the blender and blend for 2-3 minutes until completely smooth.
  • Grease a muffin tin and pour 1/4 cup batter into each cup. Top each cup-full of batter with a tablespoon of chocolate chips.
  • Bake at 350°F for 15 minutes, until an inserted toothpicks comes out clean.
  • Remove to a wire rack to cool (use a small spatula to loosen muffins from the tin if necessary).
