Instructions
Melt butter in a small pan over medium heat. Add shallot and cook, stirring occasionally to prevent browning and burning, until shallots are soft and translucent, three to four minutes. Add soy sauce and cook until most of the liquid evaporates. Remove from heat to a small bowl and let cool for approximately 15 minutes.
Mix ground turkey, pepper and shallot mixture and combine thoroughly but gently. Form two equal sized patties, an press down to create a shallow indentation in the center of each patty. This will prevent the burgers from puffing and rounding in the middle during cooking.
Cook burgers over medium heat on a grill or in a grill pan, six to eight minutes per side, until cooked through. Remove from heat and let rest for one to two minutes before serving with your favorite burger toppings.
