Toasted Coconut Cream Tarts are wonderful and light and a perfect end to a meal. Just the right amount of sweetness.

- 1 1/2 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 4 tablespoons Butter
- 1 cup Heavy Cream
- 1/2 cup Granulated Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Nutmeg
- 2 Egg
- 1 teaspoon Pure Vanilla Extract
- 1 cup Shredded Coconut
Preheat oven to 400°F.
In a food processor, blend together flour, sugar, and butter until it becomes soft crumbs.
Gently press into tart or biscuit molds that have been pre-greased.
Bake for 20 minutes or until crusts are golden brown. Let cool.
Whisk together cream, sugar, salt, nutmeg, eggs, and vanilla.
Evenly divide coconut into tart shells.
Pour mixture over coconut until they are just covered, not too full.
Bake for 30 minutes or until a knife comes out clean in the center.
Let cool and serve warm or store in the fridge to serve chilled later.
