Thai peanut noodles with spiralized vegetables is a simple pasta dish filled with healthy vegetables. It’s on the table in less than 30 minutes, which makes it the perfect weeknight dinner!

Ingredients
  

  • 1 clove Garlic minced
  • 1 teaspoon Ground Ginger
  • 2 tablespoons Pure Maple Syrup
  • 1/2 cup Natural Peanut Butter
  • 1/3 cup Soy Sauce
  • 1/2 cup Water
  • 1 tablespoon Peanut Oil
  • 2 Lime juiced
  • 1 tablespoon Peanut Oil
  • 1 large Red Onion cut into narrow wedges
  • 2 large Zucchini Squash spiralized
  • 1 large Sweet Potato spiralized
  • 2 large Carrot spiralized
  • 7 ounces Spaghettini cooked
  • Limes
  • Peanuts
  • Fresh Cilantro

Instructions
 

  • To make the sauce, whisk all ingredients together in a medium bowl. Set aside.
  • Heat 1 tbsp peanut oil in a large wok, cast iron pot or deep dish cast iron sauté pan over medium heat. Add the onion and cook until starting to soften, about 2 minutes.
  • Add the spiralled vegetables and keep tossing them very carefully until they’re softened, about 4-5 minutes.
  • Pour the sauce into the pot with the vegetables and bring to a boil. Add the spaghettini and toss carefully.
  • Serve immediately with desired garnishes.
