Ingredients
  

  • 8 cups Fresh Strawberries
  • 7 cups Granulated Sugar
  • 1/2 teaspoon Butter
  • 1 3/4 ounces Powdered Pectin

Instructions
 

  • Start by washing the strawberries and removing the tops and stems.
  • Puree the strawberries in food processor, or use a potato masher to mash them.
  • Place 5 cups of the crushed strawberries into a large saucepan and stir in the Sure Jell powdered pectin and 1/2 teaspoon of butter.
  • Bring to a boil and allow it to rapidly boil for 1 minute.
  • Add 7 cups of sugar and bring back to a rapid boil, again boiling for 1 minute, stirring constantly.
  • Remove from heat and skim off any foam, although there shouldn’t be much as the butter helps to prevent foam from building up.
  • Spoon the jam into your cans and allow them to come to room temperature before covering and refrigerating.
