- 8 cups Fresh Strawberries
- 7 cups Granulated Sugar
- 1/2 teaspoon Butter
- 1 3/4 ounces Powdered Pectin
Start by washing the strawberries and removing the tops and stems.
Puree the strawberries in food processor, or use a potato masher to mash them.
Place 5 cups of the crushed strawberries into a large saucepan and stir in the Sure Jell powdered pectin and 1/2 teaspoon of butter.
Bring to a boil and allow it to rapidly boil for 1 minute.
Add 7 cups of sugar and bring back to a rapid boil, again boiling for 1 minute, stirring constantly.
Remove from heat and skim off any foam, although there shouldn’t be much as the butter helps to prevent foam from building up.
Spoon the jam into your cans and allow them to come to room temperature before covering and refrigerating.
