Combine flours, salt, baking soda, baking powder and sugar in a medium bowl, stirring with a spoon.
Whisk together buttermilk, egg, canola oil, vanilla and club soda in a small bowl. Mix well.
Add buttermilk milk mixture to flour mixture slowly, stirring until just blended.
Preheat a waffle iron and coat with cooking spray. Spoon about 1/4 of the batter onto waffle iron and cook for about 3 to 4 minutes or until done. Repeat with remaining batter.
While waffles are cooking, melt butter in a medium saucepan. Add strawberries and sugar to pan. Mix well and cook for five minutes or until strawberries are soft and the sugar turns into a syrup.
Serve waffles topped with strawberries and whipped cream.
