Ingredients
  

  • 1/2 cup Whole Wheat Flour
  • 1/2 cup All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 tablespoon Sugar
  • 1 cup Buttermilk
  • 1 large Egg beaten
  • 2 tablespoons Canola Oil
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/4 cup Club Soda
  • 1 tablespoon Butter
  • 2 cups Strawberries cored and halved
  • 1/4 cup Granulated Sugar
  • Whipped Cream

Instructions
 

  • Combine flours, salt, baking soda, baking powder and sugar in a medium bowl, stirring with a spoon.
  • Whisk together buttermilk, egg, canola oil, vanilla and club soda in a small bowl. Mix well.
  • Add buttermilk milk mixture to flour mixture slowly, stirring until just blended.
  • Preheat a waffle iron and coat with cooking spray. Spoon about 1/4 of the batter onto waffle iron and cook for about 3 to 4 minutes or until done. Repeat with remaining batter.
  • While waffles are cooking, melt butter in a medium saucepan. Add strawberries and sugar to pan. Mix well and cook for five minutes or until strawberries are soft and the sugar turns into a syrup.
  • Serve waffles topped with strawberries and whipped cream.
