Ingredients
  

  • 1 cup Chicken Stock
  • 1/2 cup Honey
  • 1/4 cup Fresh Lime Juice
  • 3 tablespoons Adobo Sauce
  • 4 Chipotle Pepper in Adobo finely minced
  • 1 tablespoon Chili Powder
  • 1 tablespoon Paprika
  • 1 tablespoon Cumin
  • 1 tablespoon Onion Powder
  • 1 tablespoon Garlic Powder
  • 3 pounds Boneless Skinless Chicken Breast
  • 1 Kosher Salt and Black Pepper to taste

Instructions
 

  • Add chicken stock, honey, lime juice, adobo sauce, finely minced chipotle peppers, chili powder, paprika, cumin, onion powder and garlic powder to a mixing bowl. Whisk well to combine.
  • Lightly spray the crock of your slow cooker with non-stick spray.
  • Place the boneless skinless chicken breast in the slow cooker in a single layer.
  • Pour the sauce mixture over top, cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  • When the chicken is cooked through, carefully use two forks to shred it to your desired consistency.

Notes

If the sauce has not thickened to your desired consistency by the time the chicken is cooked through, make a simple cornstarch slurry and add it to the slow cooker. The sauce should thicken up within a few minutes.
