Skirt Steak Stir Fry is cooked in a searing hot cast iron skillet. Totally delicious!

Ingredients
  

  • 1 pound Skirt Steak Sliced against the grain
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 clove Garlic Crushed
  • 1 Green Bell Pepper Sliced
  • 1 cup Sweet Peppers Sliced
  • 2 cups Cooked Rice
  • 1/2 cup Cherry Tomatoes Halved
  • 4 Egg Fried
  • Salt and Pepper To taste

Instructions
 

  • Spray a cast iron skillet with cooking spray, then place the steak in the skillet to sear. Add in the olive oil and garlic, mixing it well with steak.
  • Let the steak simmer on medium-high heat for about 10 minutes, then add in the peppers.
  • Continue letting this simmer until the steak is well done.
  • While the steak is simmering, prepare the rice if you have not already done so.
  • Serve the steak and peppers topped over the rice with tomatoes and a fried egg on top, then salt and pepper if you prefer.
