Skirt Steak Stir Fry is cooked in a searing hot cast iron skillet. Totally delicious!

- 1 pound Skirt Steak Sliced against the grain
- 1 tablespoon Extra Virgin Olive Oil
- 1 clove Garlic Crushed
- 1 Green Bell Pepper Sliced
- 1 cup Sweet Peppers Sliced
- 2 cups Cooked Rice
- 1/2 cup Cherry Tomatoes Halved
- 4 Egg Fried
- Salt and Pepper To taste
Spray a cast iron skillet with cooking spray, then place the steak in the skillet to sear. Add in the olive oil and garlic, mixing it well with steak.
Let the steak simmer on medium-high heat for about 10 minutes, then add in the peppers.
Continue letting this simmer until the steak is well done.
While the steak is simmering, prepare the rice if you have not already done so.
Serve the steak and peppers topped over the rice with tomatoes and a fried egg on top, then salt and pepper if you prefer.
