Shopska Salad is a Bulgarian dish that works great as a starter or side. Fresh and light.

- 1 pint Cherry Tomatoes Or grape tomatoes, cut into quarters
- 2 Persian Cucumber Small, chopped
- 2 Green Onion Chopped
- 1/2 cup Roasted Red Peppers Chopped
- 1/4 cup Chopped Kalamata Olives
- 2 tablespoons Fresh Parsley Chopped
- 3 tablespoons Olive Oil
- 1 1/2 tablespoons Red Wine Vinegar
- 1/2 cup Crumbled Feta Cheese
- Salt and Pepper To taste, if necessary
In a medium-size salad bowl, toss together tomatoes, cucumbers, green onions, peppers, olives, and parsley. Mix in olive oil and vinegar.
Sprinkle the salad with feta cheese.
Season with salt and pepper to taste, if necessary.
The salad can be refrigerated before serving or served at room temperature.
