Roast Beef Croissant Sandwiches is an easy and quick weeknight dinner. You won't be able to resist the blue cheese aioli!

Ingredients
  

  • 4 Croissant
  • 1 pound Thick-Sliced Deli Roast Beef
  • 4 leaves Bibb Lettuce
  • 2 Roma Tomato Sliced
  • 4 ounces Crème Fraîche
  • 2 ounces Blue Cheese Crumbled
  • 2 cloves Garlic Minced
  • pinch of Salt and Pepper
  • 2 tsp choppeds Fresh Chives

Instructions
 

  • In a small bowl, combine crème fraîche, blue cheese, garlic, chives and salt and pepper. Whisk well.
  • Cut croissants in half (if not already done). Arrange lettuce on each bottom half of the croissants. Top with deli roast beef, about 2-3 slices each, depending on the thickness.
  • Top beef with tomato slices and a generous spoonful of blue cheese aioli.
  • Serve immediately.
