Ingredients
  

  • 16 ounces Dried Rigatoni Pasta
  • 1 tablespoon Olive Oil
  • 1 pound Hot Italian Turkey Sausage
  • 1 tablespoon Garlic chopped
  • 1 pint Grape Tomatoes halved
  • 1 tablespoon Dried Basil
  • 4 ounces Dry White Wine or chicken broth
  • 6 ounces Baby Spinach chopped
  • Salt and Pepper to taste
  • Grated Parmesan Cheese for serving

Instructions
 

  • Boil pasta in a large pot of water according to package directions. Drain and keep warm.
  • In the meantime, heat olive oil on medium high heat and cook sausage for about 5 to 7 minutes or until no longer pink. Add garlic, tomatoes, and dried basil. Cook for 5 minutes or until tomatoes are wilted.
  • Stir in wine or broth and bring to a simmer. Add spinach and cooked pasta to the pan. Cook for another few minutes or until sauce is thickened.
  • Add salt and pepper to taste. Serve with grated cheese if desired.
