Ingredients
  

  • 3 pounds Fresh Pumpkin (Pie or Sugar)
  • 2 tablespoons Olive Oil
  • 17 ounces Potato Gnocchi (1 package)
  • 6 tablespoons Butter
  • 8 leaves ofs Fresh Sage

Instructions
 

  • Preheat oven to 400°F.
  • Cut pumpkin in half. Clean out seeds and pulp with a large spoon. Cut pumpkin in slices and place on a baking sheet. Sprinkle with olive oil. Bake for 15-20 minutes or until tender.
  • When pumpkin is done remove from oven and cool. When cooled remove skin and dice up. Set aside.
  • Cook gnocchi according to package.
  • While it cooks add butter to saute pan. Melt until golden brown, about 3 minutes.
  • Add sage. Continue to cook butter for an additional minute.
  • Add cooked pumpkin and gnocchi. Stir.
  • Serve warm and ENJOY!
