Ingredients

  • 1 recipe No Rise Pizza Dough
  • 1/2 cup Pizza Sauce
  • 1 1/2 cups Shredded Mozzarella Cheese
  • 1/2 cup Sliced Pepperoni

Instructions

  • Preheat the oven to 350°F. Lightly spray a 12 cup muffin tin with non-stick spray and set aside.
  • Divide the prepared pizza dough into 12 pieces, and then cut each of those 12 pieces into 6 small balls.
  • Place 3 small dough pieces into the bottom of each of the muffin cups.
  • Top with 1 teaspoon pizza sauce, 2-3 pieces of pepperoni, and 1-2 tablespoons shredded cheese.
  • Repeat with another three balls of pizza dough, sauce, pepperoni and top with more cheese.
  • Cover with a clean tea towel and allow the pizza dough to puff up slightly, about 15-20 minutes. Bake for 20-25 minutes or until the cheese is bubbling and the pizza dough is lightly browned and cooked through.
  • Let the muffins cool for about 5 minutes in the muffin tin, and then carefully remove them to a wire rack. Serve warm.

Notes

  • For the pepperoni, I used 2 small turkey pepperoni sticks, sliced into small rounds. I’m sure another kind of pepperoni would be just as fantastic though!
  • Once these are baked, they can also be frozen in an airtight container or ziplock bag for up to three months.
