Potato Corn Miso Soup with Bacon is a hearty and filling soup perfect for any time of day. A great side, lunch or dinner!

- 2 cups Water
- 1 teaspoon Dashi Powder Or 2 cups homemade dashi*
- 2 tablespoons Miso Paste
- 1 medium Potato
- 2 slices Short Cut Bacon Diced
- 1/2 cup Corn Kernels
- Sliced Green Onions Optional
Boil the water in a saucepan and add the dashi powder (or boil homemade dashi).
Add potato and bacon to cook for about 5 minutes.
Add corn and the miso paste and dissolve it into the saucepan.
Lower the heat and simmer for another 5 minutes.
Serve in a small bowl and garnish with green onion (optional).
