- 2 cups Cranberries
- 3/4 cup Pecans
- 2/3 cup Sugar
- 1 cup Flour
- 1 cup Sugar
- 1 stick Unsalted Butter Melted
- 2 large Egg lightly beaten
- 1 teaspoon Pure Almond Extract
- 1/4 teaspoon Salt
Preheat oven to 350 and butter a cake pan or pie pan.
Add cranberries to the bottom of this pan. Sprinkle in chopped pecans; sprinkle in 2/3 cup sugar.
In a bowl, combine flour, a cup of sugar, melted butter, eggs, almond extract and salt. Stir to combine.
Pour batter slowly over the top in large ribbons shapes in order to evenly cover the surface.
Bake for 45 minutes or so. A few minutes prior to removing from oven, sprinkle surface with a tablespoon of sugar for extra crunch.
Cut into wedges.
Serve with ice cream or freshly whipped cream.
