Peanut Noodles Recipe

Easy peanut noodles with Asian sauce are a delicious way to get dinner on the table. Add shrimp, chicken or beef!

- 1/3 cup Peanut Butter
- 1/3 cup Boiling Water
- 1/4 cup Low Sodium Soy Sauce
- 1 1/2 tablespoons Rice Vinegar
- 1-2 teaspoons Chili Garlic Paste
- 1/2 teaspoon Granulated Sugar
- 1/4 teaspoon Salt
- 1 pound Jumbo Raw Shrimp peeled and deveined
- 10 ounces Pasta like whole grain spaghetti
- 1 Red Bell Pepper thinly sliced
- 1/2 cup Carrot shredded
- 1/4 cup Green Onions finely chopped
- 1/4 cup Dry Roasted Salted Peanuts chopped
Bring water to boil, and cook the pasta as directed on the box.
To prepare the sauce mix all of the ingredients in a liquid measuring cups. Whisk or use a fork to mix until smooth.
Heat a large skillet over medium-high heat. Spray with non-stick spray. Add shrimp, and sauté for about 3 minutes on each side, or until done.
In a large bowl combine sauce, cooked shrimp, cooked pasta, bell pepper, carrots, and green onions. Toss until combined. Garnish with chopped peanuts.
Serve immediately.
