Ingredients
  

  • 1/2 cup Butter Softened
  • 1/2 cup Shortening
  • 1 cup Creamy Peanut Butter
  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar Packed
  • 3 Egg
  • 1 teaspoon Pure Vanilla Extract
  • 3 cups All-Purpose Flour
  • 2 teaspoons Baking Soda
  • 1/4 teaspoon Salt
  • 6 ounces White Baking Chocolate Not chips, must be baking chocolate, broken into pieces
  • 1/3 cup Heavy Cream Plus 3 tablespoons, divided
  • 1 cup Butter Softened
  • 2 pound bag Powdered Sugar
  • 1 tablespoon Pure Vanilla Extract

Instructions
 

  • In a large mixing bowl, cream the butter, shortening, peanut butter, and sugars until light and fluffy.
  • Beat in eggs and vanilla.
  • In a large bowl, combine flour, baking soda and salt.
  • Add to mixing bowl, and mix well.
  • Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten slightly with a fork.
  • Bake at 375°F for 7-8 minutes or until golden brown at the edges. Remove to wire racks to cool.
  • In a small saucepan over low heat, combine white chocolate and cream. Stir until chocolate is melted and mixture is smooth.
  • Set aside and let cool to room temperature.
  • Meanwhile, in a large mixing bowl, beat butter until creamy.
  • Gradually add powdered sugar and cream, blending after each addition.
  • Add white chocolate mixture and vanilla, and beat until light and fluffy.
  • Spread the frosting on half of the cookies, and top each with another cookie. Enjoy!
