Preheat oven to 350°F.
In a large bowl, combine flour, baking powder, and baking soda.
In a large mixing bowl, combine peanut butter, butter, brown sugar, and sugar until light and fluffy.
Add egg and vanilla.
Add dry ingredients, and beat until combined.
Scoop tablespoonfuls of dough and form into balls.
Roll each ball in sugar and transfer to lightly greased baking sheets, about 2 inches apart.
Bake for about 10 minutes, or until puffy.
Remove from oven, and make an indentation in the middle with the end of a wooden spoon.
Return to oven, and bake an additional 5-6 minutes more, or until the bottom edges are golden brown.
Transfer to wire racks, and let cool completely.
In a microwave-safe bowl, heat jam for 30-60 seconds, stirring until syrupy and loose.
Spoon about 1 teaspoon into the center of each cookie. Enjoy!
