Peanut Butter & Jelly Thumbprint Cookies are a reminder of your childhood favorite. Use whatever kind of jam you like!

Ingredients
  

  • 1 1/4 cups All-Purpose Flour
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 cup Creamy Peanut Butter
  • 1/2 cup Unsalted Butter Softened
  • 1/3 cup Brown Sugar Packed
  • 1/3 cup Granulated Sugar Plus more for rolling
  • 1 large Egg Room temperature
  • 1 teaspoon Pure Vanilla Extract
  • 3/4 cup Raspberry Jam Or strawberry jam

Instructions
 

  • Preheat oven to 350°F.
  • In a large bowl, combine flour, baking powder, and baking soda.
  • In a large mixing bowl, combine peanut butter, butter, brown sugar, and sugar until light and fluffy.
  • Add egg and vanilla.
  • Add dry ingredients, and beat until combined.
  • Scoop tablespoonfuls of dough and form into balls.
  • Roll each ball in sugar and transfer to lightly greased baking sheets, about 2 inches apart.
  • Bake for about 10 minutes, or until puffy.
  • Remove from oven, and make an indentation in the middle with the end of a wooden spoon.
  • Return to oven, and bake an additional 5-6 minutes more, or until the bottom edges are golden brown.
  • Transfer to wire racks, and let cool completely.
  • In a microwave-safe bowl, heat jam for 30-60 seconds, stirring until syrupy and loose.
  • Spoon about 1 teaspoon into the center of each cookie. Enjoy!
