  • 8 small Lamb Loin Chop (about 2 pounds)
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Rosemary
  • 2 tablespoons Grapeseed Oil

Instructions

  • Sprinkle the lamb chops on both sides with the salt, pepper, garlic powder and rosemary.
  • Add oil to a large cast iron or heavy steel pan on medium high heat until very hot.
  • Carefully put in the lamb chops and sear them for about 4 minutes (for medium rare doneness) on each side.
  • Cover with foil and let rest for 10 minutes before serving.

Notes

  • They can be cooked for more or less depending on desired doneness. Use an instant read thermometer if desired. It should read 125°F for medium rare, 130°F for medium, and 145°F and higher for well done.
