- 2 large Banana Mashed
- 1/2 cup Pumpkin Puree
- 5 large Egg
- 1/2 cup Almond Butter
- 1/4 cup Melted Coconut Oil
- 1/2 cup Coconut Flour
- 2 tablespoons Pumpkin Pie Spice
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 teaspoon Pure Vanilla Extract
- pinch of Salt
In the bowl of a stand mixer fitted with a paddle attachment, beat bananas, pumpkin, eggs, almond butter, and melted coconut oil until smooth.
Add the coconut flour, pumpkin pie spice, baking soda, baking powder, vanilla, and salt and beat until well mixed.
Spray waffle iron with coconut oil and cook waffles according to manufacturer’s instructions.
