Ingredients
  

  • 3 1/2 cups Almond Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1/2 cup Coconut Oil melted and cooled
  • 1/2 cup Honey
  • 2 Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Paleo-friendly Chocolate Chips like Enjoy Life
  • 1 cup Unsweetened Coconut Flakes

Instructions
 

  • Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
  • In a mixing bowl, whisk together almond flour, baking soda, and salt.
  • In a separate bowl, use an electric mixer to beat together coconut oil and honey. Add eggs and vanilla and beat until combined. Beat in almond flour mixture until fully incorporated. Use a rubber spatula to fold in chocolate chips and coconut.
  • Drop heaping tablespoons of dough onto the prepared baking sheets.
  • Bake 8 - 10 minutes, until cookies are light golden brown, rotating the sheets halfway through. Let cookies cool slightly before transferring to a wire rack to cool completely.
  • Repeat with remaining dough.
