Ingredients
  

  • 8 tablespoons Butter Room temperature
  • 1/2 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar
  • 2 teaspoons Orange Zest Finely minced
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 3 Egg Room temperature
  • 1 3/4 cups All-Purpose Flour
  • 1/2 cup Buttermilk
  • 1 cup Dried Cranberries
  • 1/2 cup Pecans Coarsely chopped

Instructions
 

  • Preheat oven to 350°F. Spray an 8 1/2 x 4 1/2 loaf pan with nonstick baking spray containing flour. Set aside.
  • In a large bowl, beat together butter, both sugars, orange zest, cinnamon, nutmeg and salt. Add eggs one at a time, beating well after each addition.
  • Add 1/2 the flour, beat just until almost combine. Add half the buttermilk and beat again. Add remaining flour, gently mix again then add remaining buttermilk.
  • Fold in cranberries and pecans. Spread batter into prepared pan. Bake in preheated oven for 55-65 minutes or until a tester inserted in the center comes out clean. Cool in pan for 10 minutes then turn out onto a wire cooling rack to cool completely.
