Bake brownies according to package. Set aside to cool. When cooled using a cookie scoop, scoop out and make 12 brownie balls. Set aside.
Preheat oven to 400°F. Line baking sheet with parchment paper. Set aside.
Cut pastry into even 3-inch squares. Set aside.
Flip muffin pan upside down and spray with non stick cooking spray.
Place each pastry square in between each cup and make a well in the center.
Bake for 7 minutes. Place a brownie ball in the center of each pastry, pressing down gently and continue to bake for 3-5 minutes or until pastry is golden brown.
In a mixing bowl add heavy cream. Add in food coloring and mint extract. Whisk on high for 1 minute until soft peaks.
Slowly add in sugar and continue to whisk until soft peaks form. About 3 minutes.
