Mascarpone Pancakes just made Sunday breakfast a little more exciting. You'll never need another pancake recipe again.

- 1 cup All-Purpose Flour
- 1 cup Whole Wheat Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1/8 teaspoon Nutmeg
- 1/4 teaspoon Cardamom
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/4 cup Granulated Sugar
- 2 Eggs
- 2 cups Buttermilk
- 1/2 cup Mascarpone Cheese
- 1 teaspoon Pure Vanilla Extract
Sift together flours, baking powder, cinnamon, nutmeg, cardamom, baking soda, and salt.
In another bowl, whisk together sugar and eggs, then whisk in buttermilk, mascarpone cheese, and vanilla.
Pour the wet ingredients into the flour mixture and mix thoroughly. Let sit for 30 minutes.
Pour batter onto a preheated griddle pan and cook until bubbles form, then flip and cook until browned.
Serve with warmed syrup and butter.
