Maple Bacon Pancake Poppers combine bacon and pancakes all in one bite. Try these for your pancake Sunday!

Ingredients
  

  • 4 slices Bacon
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Cinnamon
  • 1 cup Milk
  • 1 Egg
  • 2 tablespoons Pure Maple Syrup
  • 1 tablespoon Butter Melted

Instructions
 

  • Preheat oven to 400°F. Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon across rack and bake for 15 minutes. Let cool enough to handle.
  • Reduce oven to 350°F and grease a muffin tin.
  • Meanwhile, sift together flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
  • In a separate bowl, whisk together egg and milk, and stir into flour mixture to make a batter.
  • Chop bacon and mix with the maple syrup, then stir into the batter. Stir in the melted butter.
  • Scoop 1 tablespoon of batter into each muffin well. Bake for 10 minutes, let cool slightly, and serve with powdered sugar or extra syrup for dipping.
