Preheat oven to 400°F. Line a rimmed baking sheet with foil and place a wire rack on top. Lay bacon across rack and bake for 15 minutes. Let cool enough to handle.
Reduce oven to 350°F and grease a muffin tin.
Meanwhile, sift together flour, baking soda, baking powder, salt, and cinnamon in a large bowl.
In a separate bowl, whisk together egg and milk, and stir into flour mixture to make a batter.
Chop bacon and mix with the maple syrup, then stir into the batter. Stir in the melted butter.
Scoop 1 tablespoon of batter into each muffin well. Bake for 10 minutes, let cool slightly, and serve with powdered sugar or extra syrup for dipping.
