- 1 pound Lean Ground Beef
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 1 teaspoon Chili Powder
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Ground Cayenne Pepper
- 1 teaspoon Hot Sauce
- 1 tablespoon Butter
- 1 tablespoon All-Purpose Flour
- 1 cup Milk
- 1 1/4 cups Shredded Sharp Cheddar Cheese
- 4 cups Tortilla Chips
- 1/2 cup Refried Beans
- 1/2 cup Shredded Monterey Jack Cheese
- 1/2 cup Shredded Cheddar Cheese
- 1/4 cup Fresh Cilantro Chopped
- 1/4 cup Sour Cream
- 1/2 cup Salsa
- 1 Avocado Peeled, pitted, and chopped
- 1 jalapeños Jalapeño Diced
- Hot Sauce
In a large skillet, cook ground beef with the spices and hot sauce, breaking the meat up so it doesn’t form large chunks. Once cooked, set aside.
In a medium saucepan over medium heat, melt 1 Tablespoon butter for the cheese sauce.
Whisk in the flour and cook until it begins to brown and bubble, approximately 1 minutes.
Whisk in milk and cook until thickened, approximately 2 to 3 minutes.
Finally, stir in 1 1/4 cups shredded cheddar cheese until melted. Keep warm on low heat.
Make a single layer of tortilla chips on a rimmed baking sheet.
Dot the refried beans throughout the chips.
Add a layer of 3/4 of the meat, then top with the Monterrey jack and cheddar cheese for the nachos.
Broil under High heat until the cheese is melted.
Add a final layer of the meat and top with cheese sauce.
Finally, top with all your favorite toppings - cilantro, green onion, sour cream, chopped avocado, salsa, hot sauce and jalapeños.
Serve immediately.
