- 2 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/2 teaspoon Salt
- 1 tablespoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1 tablespoon Poppy Seeds
- 1 tablespoon Lemon Zest
- 1 Egg
- 1 cup Plain Greek Yogurt
- 2 tablespoons Lemon Juice
- 4 tablespoons Unsalted Butter melted and cooled
Preheat oven to 400°F and grease a muffin pan or fill with paper liners.
Sift together flour, sugar, salt, baking powder, baking soda, poppy seeds, and lemon zest in a medium bowl.
In a large bowl, beat together egg, yogurt, and lemon juice. Stir in melted butter.
Mix dry ingredients into wet ingredients until well combined. Batter will be thick and lumpy.
Divide batter among muffin cups.
Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean.
