Ingredients
  

  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 teaspoon Salt
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 tablespoon Poppy Seeds
  • 1 tablespoon Lemon Zest
  • 1 Egg
  • 1 cup Plain Greek Yogurt
  • 2 tablespoons Lemon Juice
  • 4 tablespoons Unsalted Butter melted and cooled

Instructions
 

  • Preheat oven to 400°F and grease a muffin pan or fill with paper liners.
  • Sift together flour, sugar, salt, baking powder, baking soda, poppy seeds, and lemon zest in a medium bowl.
  • In a large bowl, beat together egg, yogurt, and lemon juice. Stir in melted butter.
  • Mix dry ingredients into wet ingredients until well combined. Batter will be thick and lumpy.
  • Divide batter among muffin cups.
  • Bake for 12-15 minutes, until a toothpick inserted into the center comes out clean.
