- 1 cup Granulated Sugar
- 1 medium Green Apple peeled (peels reserved)
- 2 tablespoons Fresh Lemon Juice
- 4 ounces Vodka
Put the sugar, a cup of water, and 3/4 of the apple peel into a medium saucepan. Bring to a boil.
Continue to heat, stirring occasionally, for around 5 minutes until the sugar has dissolved.
Pour the syrup into a medium bowl over an ice bath and stand, stirring from time to time, until cool.
Strain through a fine sieve into another bowl and throw away any solids.
Cut the apple into chunks and press it through an electric juicer into a small bowl.
Drain through a fine sieve into another bowl and throw away any solids.
Fill a cocktail shaker with ice and pour in the vodka, 2 ounces of the syrup, and 1/3 cup of the apple juice.
Shake well then divide between 2 martini glasses. Garnish with remaining apple strips if required.
