Instructions
Preheat oven to 350 degrees Fahrenheit.
Place a v-shaped wire rack into a roasting tray and position the breast on it, seasoning well with salt and pepper. Drizzle with olive oil.
Roast for about 1 hour, 45 minutes until juices run clear and internal temperature is at least 155 degrees when inserted into the thickest part of the breast.
Allow to rest for 10 minutes before carving.
While the meat is resting, add 1 tbsp flour into the roasting pan and whisk; add ½ cup water and whisk until fully combined, creating a rich, flavorful pan-dripping gravy.
