Ingredients

  • 6 large Egg
  • 1 Shallot minced
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Coarse Grain Mustard
  • 1 tablespoon Fresh Dill minced
  • 1 tablespoon Fresh Tarragon minced
  • 1 tablespoon Fresh Chives minced
  • Salt and Pepper to taste
  • Fresh Herbs for garnish

Instructions

  • Place eggs in the Dreamfarm Vebo and place into a saucepan a medium saucepan (if not using a Vebo, place eggs directly into saucepan).
  • Cover eggs with water by one inch. Cover with lid and bring water to a boil over medium high heat.
  • Once water reaches a boil, keep covered and remove pan from heat.
  • Allow eggs to sit in pan for 11-12 minutes. Use handles to remove Vebo, with eggs, from the water, allowing extra water to drain back into the saucepan (or alternately use slotted spoon to scoop eggs from the hot water).
  • Place Vebo with eggs into a large bowl of ice water.
  • Once eggs are cool enough to handle, remove peel and cut in half. Place egg yolks in a shallow bowl and reserve whites.
  • Mash egg yolks slightly (I used my Dreamfarm Smood but you can use the back of a fork).
  • Add shallot, mayonnaise, mustard, dill, tarragon, chives, salt and pepper to taste.
  • Mix until combined.
  • Spoon mixture back into reserved egg whites and top with extra herbs for garnish.
  • Enjoy!
