Gluten Free Oatmeal Cookies Recipe

Gluten Free Oatmeal Cookies requires no flour at all. A total crowd pleaser.

- 3 tablespoons Unsalted Butter At room temperature
- 1/2 cup Light Brown Sugar Packed
- 1 Egg At room temperature
- 1/2 teaspoon Pure Vanilla Extract
- 1/4 teaspoon Salt
- 1/4 teaspoon Cinnamon
- 1 1/2 cups Certified Gluten Free Oats
Preheat oven to 350°F.
In a mixing bowl, cream together butter and brown sugar until smooth.
Add the egg, vanilla salt and cinnamon. Whisk until smooth for about 2-3 minutes.
Stir in oats and mix until evenly incorporated.
Drop by spoonful on a baking sheet lined with parchment paper.
Bake for 13 minutes or until edges are golden brown.
Transfer to a cookie sheet. They will be a little soft while they are hot and will bend easily so be careful.
Let them cool completely before serving. They will become more firm and you'll be able to pick them up and eat them once they've cooled.
Store in an airtight container with parchment paper in between each layer.
