Ingredients
  

  • 3 tablespoons Unsalted Butter At room temperature
  • 1/2 cup Light Brown Sugar Packed
  • 1 Egg At room temperature
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Cinnamon
  • 1 1/2 cups Certified Gluten Free Oats

Instructions
 

  • Preheat oven to 350°F.
  • In a mixing bowl, cream together butter and brown sugar until smooth.
  • Add the egg, vanilla salt and cinnamon. Whisk until smooth for about 2-3 minutes.
  • Stir in oats and mix until evenly incorporated.
  • Drop by spoonful on a baking sheet lined with parchment paper.
  • Bake for 13 minutes or until edges are golden brown.
  • Transfer to a cookie sheet. They will be a little soft while they are hot and will bend easily so be careful.
  • Let them cool completely before serving. They will become more firm and you'll be able to pick them up and eat them once they've cooled.
  • Store in an airtight container with parchment paper in between each layer.
