Gluten Free Mini Meatloaf Recipe

Gluten free mini meatloaf is quick and easy to make. Everyone will love this allergen-friendly meal!

Ingredients
  

  • 2 Egg beaten
  • 2 cups Certified Gluten Free Oats or quick cooking oats (will not be gluten-free if oats are not certified)
  • 1/2 cup Evaporated Milk
  • 1/2 cup Chopped Onion
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 2 pounds Lean Ground Beef
  • 2 cups Ketchup
  • 1 1/2 cups Brown Sugar packed
  • 1/2 cup Chopped Onion
  • 1 teaspoon Liquid Smoke
  • 1/2 teaspoon Garlic Powder

Instructions
 

  • Preheat the oven to 400°F.
  • In a large bowl combine the meatloaf ingredients.
  • Spray a 9x13-baking dish or a mini meatloaf pan with non-stick cooking spray.
  • Shape small portions of the meat mixture into small loaves and place in the pan about 2 inches apart.
  • Bake for 30 minutes at 400°F.
  • Carefully remove the dish from the oven, drain if needed.
  • In a small saucepan, bring all sauce ingredients to a boil.
  • Pour over the meatloaf.
  • Return to the oven for an additional 30 minutes or until cooked all the way through.
