Gluten Free Mini Meatloaf Recipe

Gluten free mini meatloaf is quick and easy to make. Everyone will love this allergen-friendly meal!

- 2 Egg beaten
- 2 cups Certified Gluten Free Oats or quick cooking oats (will not be gluten-free if oats are not certified)
- 1/2 cup Evaporated Milk
- 1/2 cup Chopped Onion
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Garlic Powder
- 2 pounds Lean Ground Beef
- 2 cups Ketchup
- 1 1/2 cups Brown Sugar packed
- 1/2 cup Chopped Onion
- 1 teaspoon Liquid Smoke
- 1/2 teaspoon Garlic Powder
Preheat the oven to 400°F.
In a large bowl combine the meatloaf ingredients.
Spray a 9x13-baking dish or a mini meatloaf pan with non-stick cooking spray.
Shape small portions of the meat mixture into small loaves and place in the pan about 2 inches apart.
Bake for 30 minutes at 400°F.
Carefully remove the dish from the oven, drain if needed.
In a small saucepan, bring all sauce ingredients to a boil.
Pour over the meatloaf.
Return to the oven for an additional 30 minutes or until cooked all the way through.
