These Gluten Free Crispy Squash Chips are the perfect option for a healthier snack. They’re deliciously salty, crunchy, and better for you than the standard chip!

1 large Yellow Squash 1 cup Skim Milk 2 cups All-Purpose Gluten Free Flour 2 Egg 2 cups Gluten Free Bread Crumbs 1/2 tablespoon Salt Olive Oil Cooking Spray
Preheat the oven to 425°F.
Thinly slice the yellow squash into rounds.
Place the squash in a 9x13 baking dish and pour the milk over it to soak for about 10 minutes.
Prepare another bowl with the flour.
Prepare a second bowl with the eggs, whisk them well.
Lastly, prepare a bowl with the gluten free breadcrumbs and salt.
Dip each slice of squash into the flour then into the egg and coat with the breadcrumbs.
Place the squash on a broiler pan.
Spray it evenly with the cooking spray.
Bake for 15 minutes or until browned, serve with additional salt if desired.
