Ingredients
  

  • 1 large Yellow Squash
  • 1 cup Skim Milk
  • 2 cups All-Purpose Gluten Free Flour
  • 2 Egg
  • 2 cups Gluten Free Bread Crumbs
  • 1/2 tablespoon Salt
  • Olive Oil Cooking Spray

Instructions
 

  • Preheat the oven to 425°F.
  • Thinly slice the yellow squash into rounds.
  • Place the squash in a 9x13 baking dish and pour the milk over it to soak for about 10 minutes.
  • Prepare another bowl with the flour.
  • Prepare a second bowl with the eggs, whisk them well.
  • Lastly, prepare a bowl with the gluten free breadcrumbs and salt.
  • Dip each slice of squash into the flour then into the egg and coat with the breadcrumbs.
  • Place the squash on a broiler pan.
  • Spray it evenly with the cooking spray.
  • Bake for 15 minutes or until browned, serve with additional salt if desired.
