Ingredients
  

  • 4 Cucumber around 2.5 lbs, peeled and sliced into 1/4-inch rounds
  • 1 Sweet Onion (small), thinly sliced into rings
  • Kosher Salt to taste
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Dill
  • 2 tablespoons White Vinegar
  • Freshly Cracked Black Pepper

Instructions
 

  • If you wish to salt the cucumbers to draw out some moisture, place a colander into a large bowl. Add the cucumbers, onions and salt to the colander and toss so that the salt is evenly distributed. Allow this to sit for 1 hour.
  • Line a baking sheet with paper towel and place the cucumbers and onions on it. Lay another layer of paper towel on top and pat dry.
  • In a small bowl, whisk sour cream, dill, vinegar and finish with some freshly cracked black pepper.
  • In a large serving bowl, add the cucumbers and onions and drizzle with the dressing; toss well to ensure everything is thoroughly mixed.
