Fennel Avocado Salad Recipe

Avocado, Fennel and Orange Salad goes with any holiday meal. Refreshing with amazing seasonal ingredients!

- 2 Avocado Pitted and peeled
- 1 tablespoon Balsamic Vinegar
- 2 tablespoons Olive Oil
- 1 teaspoon Lemon Juice
- 1/4 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup Shaved Fennel
- 1 Orange Cut into supremes
- 1/2 cup Dried Cranberries
In a small bowl, whisk together balsamic vinegar, olive oil, lemon juice, salt and pepper.
Toss fennel, oranges and dried cranberries in the vinaigrette. Arrange over the sliced avocado or avocado cut into cubes. Serve chilled.
